  • 1 cup pearl barley, rinsed
  • 300grams broccoli, cut into small florets
  • 200grams green beans, trimmed
  • 200grams snow peas, trimmed
  • 360grams haloumi
  • 1tablespoons Woolworths extra virgin olive oil
  • 2/3 cup green goddess dressing
  • 1 bunch basil, leaves picked

Description

Haloumi shares the spotlight with greens, barley, basil and green goddess dressing in this sensational salad. Serve it alongside your favourite mains.
Instruction tip
Variation:
Instead of basil, you can use other herbs, such as parsley, coriander or dill.

Method

Step 1 of 4

Cook barley according to packet instructions. Drain. Refresh under cold water, then drain.

Step 2 of 4

Meanwhile, cook broccoli, beans and snow peas in a saucepan of boiling water for 2 minutes or until just tender. Drain. Refresh under cold water, then drain. Set aside until ready to use.

Step 3 of 4

Cut each block of haloumi in half crossways, then cut each piece in half horizontally to form 8 thin pieces in total. Heat oil in a large frying pan over medium-high heat. Cook haloumi for 2 minutes on each side or until golden.

Step 4 of 4

Place barley, broccoli, beans, snow peas, haloumi and half each of the dressing and basil in a large bowl. Season with pepper and gently toss to combine. Top with remaining basil and serve with remaining dressing.
