  • 250grams frozen peas
  • 6 mint leaves, torn
  • 3 zucchini, diced
  • 1/3 cup extra virgin olive oil
  • 1 lemon, finely zested (plus 2 tbs juice)
  • 180grams persian feta, crumbled
  • 1kilograms frozen broad beans

Method

Step 1 of 3

Add beans and peas to a saucepan of boiling water for 3-4 minutes until bright green. Drain and refresh under cold water. Drain, peel beans and discard skins. Transfer to a large bowl.

Step 2 of 3

Heat 1 1/2 tbs of the oil in a small frying pan and cook zucchini over medium-high heat for 5 minutes until golden and tender. Add to bowl with beans and peas, along with lemon zest, mint and feta.

Step 3 of 3

Whisk lemon juice and remaining oil together in a jug. Season with pepper. Pour over salad and serve.
