Description
Pairing juicy mango with crunchy cabbage and peanut praline, this mango salad will steal the show at your next summer barbecue or party.
Instruction tip
Cooking tip:The sugar needs to be dissolved before the mixture reaches boiling point; if not, the praline will crystallise.
Method
Step 1 of 3
Line a baking tray with baking paper. Combine sugar and 2 tbs water in a small saucepan over low heat. Cook, stirring, for 2 minutes or until sugar has dissolved. (Avoid reaching boiling point). Increase heat to high and bring to the boil. Boil, without stirring, for 7 minutes or until golden. Remove pan from heat. Let bubbles subside. Stir in peanuts, then pour onto the tray. Stand for 30 minutes or until set.
Step 2 of 3
Whisk oil, vinegar and sauce in a small bowl.
Step 3 of 3
Arrange cabbage, mango and cucumber on a platter. Drizzle with dressing. Top with coriander and peanut praline. Serve.
