  • 1 punnet chives, finely chopped
  • 1 lemon, cut into cheeks (to serve)

Description

For an eye-catching and fresh side, try this crunchy wedge green salad. It's full of veggies and herbs, and topped off with a creamy buttermilk dressing.

Method

Step 1 of 3

Cook peas in a small saucepan of boiling water for 1 minute or until bright green and just tender. Drain and refresh in a bowl of iced water. Drain.

Step 2 of 3

Arrange lettuce, peas, baby cucumbers and mint on a platter.

Step 3 of 3

Whisk buttermilk, vinegar and chives in a small bowl. Drizzle over salad. Season with pepper and serve with lemon cheeks.
