Description

Creamy whipped ricotta, juicy peaches, fresh herbs and a zesty mustard dressing – this super-easy salad is perfect for an alfresco dinner or picnic.

Method

Step 1 of 3

Whisk oil, mustard, vinegar and syrup in a small jug. Season.

Step 2 of 3

Process ricotta, garlic, lemon zest and lemon juice in a food processor. Season.

Step 3 of 3

Spread ricotta mixture over a large platter. Top with peaches, rocket, onion, basil and mint. Drizzle over dressing, then sprinkle with pistachios. Serve.
