  • 1 cup fresh parsley, chopped
  • 1/4 cup fresh coriander, chopped
  • 1 truss tomato, diced
  • 1 can lentils, drained and rinsed
  • 1/4 cucumber, diced
  • 250grams feta
  • 1/2 cup lemon, juiced
  • 1/4 cup extra virgin olive oil
  • 1/4teaspoons salt (to taste)

Method

Get a large bowl

Step 2 of 9

Wash all your vegetables and set aside

Step 3 of 9

Add your tin of lentils to the large bowl. Make sure you have drained and rinsed them

Step 4 of 9

Then add the parsley and coriander. Make sure you have chopped the parsley and coriander before adding to the bowl. I used curly parsley but flat leaf works well too

Add your diced tomato to the bowl

Add your diced cucumber to the bowl

Step 7 of 9

Now crumble your feta over all the ingredients in the bowl

Add the juiced lemon and olive oil. Salt to taste

Now mix all the ingredients lightly and add to a serving bowl. Enjoy! This dish works well as a side with grilled meat or perfect as a stand alone dish.
