  • 3tablespoons basil, fresh, chopped
  • 5tablespoons parsley, fresh, chopped
  • 1tablespoons mint, fresh, chopped

Description

A fresh and vibrant rice salad with plenty of lemon and creamy feta.

Method

Step 1 of 4

Rinse the rice and boil according to instructions on pack. Drain and place in a large bowl.

Step 2 of 4

Boil the broad beans in a large pan of salted boiling water for 2-3 minutes, drain and add to the rice.

Step 3 of 4

Mix the lemon juice and olive oil and then pour over the rice and beans mix.

Step 4 of 4

Mix in the chopped spring onions, herbs and lemon zest, tossing to combine. Crumble the feta on top and serve.
