For the salad
  • 2teaspoons olive oil
  • 350grams kale, destalked, chopped
  • 500grams mixed grains
  • 60grams harissa paste
  • 1 medium red onion, peeled, diced
  • 300grams smoked tofu
  • 80grams pomegranate seeds
  • 3tablespoons mint, fresh, chopped
  • 3tablespoons coriander, fresh, chopped
  • 1 pinch cracked black pepper

Description

Smokey tofu and fiery harissa work perfectly with sweet pomegranate in this quick and easy vegetarian salad.
Instruction tip
Add flaked almonds for extra crunch.

Method

Step 1 of 4

Drizzle olive oil in a large saucepan over a medium high heat and fry the kale until crispy, about 3 minutes, cooking in batches. Set aside.

Step 2 of 4

Cook the mixed grains according to pack instructions, pour into a large bowl and fluff with a fork. Add the harissa and mix well.

Step 3 of 4

Slice the tofu into batons and add to the gran mix along with the crispy kale and red onion, mixing well.

Step 4 of 4

Add the chopped herbs, pomegranate seeds and black pepper, mix and serve.
