  • 1/2 cup plain flour
  • 1 1/4 cup self-raising flour
  • 50grams vegan margarine, melted
  • 1 small eggplant, thinly sliced
  • 2tablespoons parsley leaves (to serve)
  • 1 small sweet potato, thinly sliced
  • 1 beetroot, thinly sliced
  • 3 sheet nori
  • 500grams tofu
  • 1L vegetable oil (for deep frying)
  • 1 1/3 cup chilled soda water

Method

Step 1 of 3

Place flour into a bowl. Add margarine and soda water. Whisk to a smooth batter. Set aside.

Step 2 of 3

Preheat oven to 160°C. Line a baking tray with paper towel. Half fill a medium saucepan with oil and place over medium heat. When hot, cook sliced vegetables, in batches, for 2-3 minutes or until golden. Drain on prepared tray. Keep warm in oven.

Step 3 of 3

Cut tofu into 12 slices. Cut each nori sheet into 4 strips. Wrap a nori strip around each tofu slice. Pat dry with paper towel. Lightly coat slices with flour, then dip into batter. Carefully lower into hot oil, in batches and cook for 3-4 minutes or until golden. Drain on paper towel. Sprinkle with parsley and serve with veggie chips.
