  • 1 red capsicum, thinly sliced
  • 150grams gai lan
  • 2 cm piece ginger
  • 1 red onion, sliced
  • 2teaspoons kecap manis
  • 5milliliter virgin olive oil spray
  • 85grams long rice
  • 150grams firm tofu
  • 2 clove garlic, thinly sliced
  • 1teaspoons lime juice

Method

Step 1 of 3

Cook rice in a medium saucepan of boiling water according to packet instructions, or until al dente. Drain well, set aside.

Step 2 of 3

Heat a large wok over a high heat, spray with oil. Add the tofu, stir fry for 2 minutes or until golden, remove from wok and set aside. Add onion, stir fry for 2 minutes or until golden. Add garlic and ginger, stir fry for 30 seconds or until aromatic. Add gai lan and capsicum, stir fry for 2 minutes or until vegetables are almost tender.

Add rice, lime juice and kecap manis. Toss together for 1-2 minutes, or until everything is well combined and rice is heated through.
