- 225grams smoked tofu
- 4tablespoons olive oil (save 2 tbs for frying)
- 1 large onion, roughly chopped
- 2 celery sticks, roughly chopped
- 100grams dried apricots, roughly chopped
- 50grams breadcrumbs
- 1 egg
- 1tablespoons sage, chopped
- 1 pinch salt
- 1teaspoons pepper

Method
Step 1 of 4
Pat the tofu dry on kitchen paper and tear into chunks. Heat the oil in a frying pan and fry the onion and celery for 5 minutes until softened. Tip them into a food processor and add the tofu and apricots. Blend the ingredients to a chunky paste, scraping down the mixture from the sides of the bowl if necessary.

Tip the mixture into a mixing bowl and add the breadcrumbs, egg and sage. Season with salt and pepper and beat well until everything is evenly combined.
Step 3 of 4
Divide the mixture into eight portions. Using lightly floured hands, shape each portion into a sausage, pressing the mixture together firmly.
Step 4 of 4
Heat a little oil in a nonstick frying pan and fry the sausages for about 5 minutes, until they are golden. Serve with chunky chips and a spicy relish.
