  • 1/4 green cabbage
  • 1/4 red cabbage
  • 2 carrots (finely shredded)
  • 2 spring onions (sliced)
  • 1-2tablespoons lemon juice
  • 1teaspoons maple syrup
  • 1 green apple (cored, juliennned)
  • 2tablespoons tahini
  • 1/3 cup pistachios (chopped)

Method

Step 1 of 2

Finely shred cabbages and place into a large bowl. Add carrot, apple and half the spring onion. Toss well to combine.

Step 2 of 2

To make the mayonnaise, process avocado until smooth. Add the tahini and lemon juice and blend until combined. Season with a little pepper and add a drizzle of maple syrup, if desired. Thin mayonnaise with a little bit of water if necessary. Drizzle dressing over slaw and top with remaining spring onion and pistachio.
