  • 1/4 cup pure maple syrup
  • 1 1/2tablespoons tahini
  • 1 bunch kale, stems removed, washed
  • 2tablespoons apple cider vinegar
  • 1 1/2tablespoons olive oil
  • 1 cup walnuts
  • 1 bunch Tuscan kale

Method

Step 1 of 3

Combine 1 tbs apple cider vinegar with 2 tsp oil in a large bowl. Add both kale leaves and massage for 1-2 minutes or until softened and bright in colour.

To make the dressing, whisk remaining vinegar and oil, syrup and tahini together in a small bowl.

Step 3 of 3

Arrange kale on a platter. Add apple and walnuts and season with pepper. Serve with dressing.
