  • 400grams chicken breast fillets
  • 1 lemon, zested, juiced
  • 2tablespoons extra virgin olive oil
  • 420grams Woolworths no-added-salt lentils, rinsed, drained
  • 1/4 cup dry roasted almonds, roughly chopped
  • 120grams baby spinach leaves
  • 1/2 bunch continental parsley, leaves picked
  • 3 celery sticks, thinly sliced
  • 125grams raspberries

Description

Fire up the barbie for this delicious grilled chicken recipe. Lean chicken breasts are the hero of this nutritionally approved raspberry and grain salad.

Method

Step 1 of 3

Cook freekeh according to packet instructions. Drain. Set aside to cool slightly.

Step 2 of 3

Meanwhile, place chicken, lemon zest and half the oil in a medium bowl and toss to coat. Season with pepper. Preheat a barbecue grill or chargrill pan over medium heat. Cook chicken for 7 minutes on each side or until lightly charred and cooked through. Transfer to a plate, cover loosely with foil and rest for 5 minutes. Thinly slice.

Step 3 of 3

Place lemon juice and remaining oil in a large bowl and whisk to combine. Add freekeh, lentils, almonds, spinach, parsley and celery, and toss gently to combine. Serve salad topped with chicken and raspberries.
