- 2 limes, juiced
- 2tablespoons Woolworths vegetable oil
- 2teaspoons fish sauce
- 1teaspoons caster sugar
- 1 long red chilli, deseeded, finely chopped
- 640grams mix-a-mato mini tomatoes, halved (thickly sliced, if large)
- 2 French shallots, thinly sliced into rounds
- 1/2 bunch coriander, leaves picked
- 1 bunch Thai basil, leaves picked
- 1/4 cup unsalted roasted peanuts, coarsely chopped
Description
Whip up this Thai-style salad in minutes for a zesty side. The delightful dressing has perfectly balanced sweet and sour flavours.
Method
Step 1 of 2
Place lime juice, oil, fish sauce, sugar and chilli in a small bowl and whisk to combine.
Step 2 of 2
Place tomato, shallot, coriander, basil and half the dressing in a large bowl and toss to combine. Transfer to a platter. Scatter over peanuts and serve with remaining dressing.
