  • 1/2 bunch coriander, leaves picked
  • 1 jalapeno chilli, thinly sliced

Method

Step 1 of 2

Place oil and lime juice in a small bowl and whisk to combine.

Step 2 of 2

Arrange watermelon, cucumber, mint and coriander on a large platter. Scatter over chilli and drizzle with dressing. Serve with lime cheeks.
