  • 1 banana (thinly sliced)
  • 2tablespoons mint leaves (to serve)
  • 6 strawberries (plus extra to serve)
  • 1/4teaspoons ground cinnamon
  • 2tablespoons maple syrup
  • 8 slices wholegrain sourdough bread
  • 2/3 cup reduced-fat ricotta
  • 2 free range eggs

Method

Step 1 of 3

Lightly whisk eggs, milk, half the maple syrup and cinnamon in a large, wide, shallow bowl. Spread bread with ricotta. Top 4 bread slices with strawberries and banana, then sandwich with remaining bread.

Dip each sandwich into egg mixture, turning to soak both sides.

Step 3 of 3

Heat a medium, non-stick frying pan over medium-low heat. Add half the margarine, swirling pan to coat. When margarine starts to foam, add 2 sandwiches to pan and cook for 3-4 minutes or until golden, then turn and cook for a further for 2-3 minutes or until golden. Remove from pan and cut in half. Repeat with remaining sandwiches. Drizzle over remaining syrup and serve with extra strawberries and mint.
