- 1 cup sugar
- 1kilograms seedless watermelon
- 2 handfuls mint leaves
- 250grams strawberries

Method
Step 1 of 6
Place sugar and water into a small saucepan. Stir over low heat until sugar has dissolved.
Step 2 of 6
Add mint and simmer for 5 minutes then remove from heat. Add chopped strawberries and set aside for 5 minutes.
Step 3 of 6
Meanwhile, remove rind from watermelon and roughly chop flesh. Place food into a food processor.
Step 4 of 6
Strain syrup and add strawberries to processor with watermelon. Process until smooth and strain through a fine sieve into a bowl. Discard pulp.
Step 5 of 6
Pour into 2 shallow metal trays and freeze for 2 hours. Remove from freezer and flake with a fork to create icy crystals.
Step 6 of 6
Return to freezer for 2 hours then flake again. Spoon into chilled glasses and serve garnished with mint.
