Description

Make the most of pineapple offcuts with this pineapple juice recipe. Blitz the peel and core with water until smooth, then simply strain, serve and sip.

Method

Step 1 of 2

Peel, core and roughly chop pineapple. Reserve pineapple flesh for another use.

Step 2 of 2

Place pineapple peel, core and 1 cup water in a blender and blitz until smooth and combined. Strain mixture through a fine sieve into a jug, pressing pulp with the back of a spoon until all the juice has been extracted. Half-fill 4 x 1-cup capacity glasses with crushed ice. Divide pineapple mixture among glasses. Top each with a mint sprig and serve.
