  • 125grams butter, chopped
  • 1/3 cup demerara sugar
  • 1/2 pineapple, skin removed
  • 1/4teaspoons ground cardamom
  • 4 scoop vanilla ice cream (to serve)
  • 1/2 cup firmly packed brown sugar
  • 4 small waffles (to serve)
  • 1/4 cup rum

Method

Step 1 of 5

Combine butter, cream, sugar and rum in a small saucepan. Bring to the boil over medium heat, stirring constantly. Continue stirring for 5 minutes or until sauce has slightly thickened. Keep warm.

Cut pineapple into wedges. Trim off core and cut into pieces.

Step 3 of 5

Combine sugar and cardamom in a bowl. Sprinkle over both sides of the pineapple pieces.

Step 4 of 5

Heat a chargrill plate (or grill) on medium-high heat. Cook pineapple pieces for about 2 minutes each side or until golden.

Step 5 of 5

Toast waffles and top with pineapple pieces, a scoop of ice-cream and rum sauce. Serve immediately.
