  • 1tablespoons black sesame seeds
  • 500grams watermelon, peeled, deseeded and diced
  • 175grams feta cheese, diced
  • 875grams rocket leaves
  • 1 sprig mint
  • 6tablespoons olive oil
  • 1tablespoons orange flower water
  • 1 1/2tablespoons lemon, juiced
  • 1teaspoons pomegranate syrup
  • 1/2teaspoons caster sugar
  • 1 pinch salt
  • 1 pinch pepper

Method

Step 1 of 3

Heat a frying pan and dry-fry the sesame seeds for 2 minutes until aromatic, then set aside.

Step 2 of 3

Arrange the watermelon and feta on a large plate with the rocket and herbs.

Step 3 of 3

Whisk together the oil, orange flower water, lemon juice, pomegranate syrup (if used) and sugar. Season to taste with salt and pepper, then drizzle over the salad. Scatter over the sesame seeds and serve with toasted pitta bread.
