  • 420grams Mexican style 3 bean mix no added salt can, rinsed, drained
  • 1 large tomato, finely chopped
  • 2 spring onions, thinly sliced
  • 2 cloves garlic, crushed
  • 2/3 cup Woolworths shredded tasty cheese
  • 1/3 cup Woolworths mild taco sauce
  • 1/3 cup Woolworths sour cream
  • 1/4 bunch coriander, leaves picked, coarsely chopped

Description

Potato shells loaded with a tasty bean mix, melted cheese, taco sauce and sour cream make a delicious, budget-friendly weeknight dinner.

Method

Step 1 of 2

Using a fork, pierce potatoes all over. Microwave potatoes on high for 8-10 minutes or until tender when pierced with a skewer. Remove from microwave. Cool slightly. Cut in half, then using a teaspoon, scoop out flesh to leave a 1cm-thick border. Place potato flesh in a large bowl and coarsely mash. Stir in beans, tomato, onion and garlic. Season.

Preheat an oven grill to high. Line a baking tray with baking paper. Place potato shells on prepared tray. Spoon potato mixture equally among potatoes. Top with cheese. Grill for 5 minutes or until golden-brown. Serve topped with taco sauce, sour cream and coriander.
