  • 1.70kilograms Woolworths whole marinated seasoned chicken
  • 1/2 punnet thyme, sprigs picked
  • 1.50L Woolworths salt-reduced chicken stock
  • 2 cups Woolworths spiral pasta
  • 800grams Woolworths diced Italian tomatoes
  • 200grams green beans, trimmed, cut into 2cm lengths
  • 3 carrots, cut in half lengthways, sliced
  • 1/2 bunch continental parsley, leaves picked and coarsely chopped
  • 425grams Macro no-added-salt cannellini beans, drained, rinsed
  • 20grams parmesan, finely grated

Description

The whole chook is the star of this Italian-inspired soup, which features cannellini beans, spiral pasta and lots of parmesan.

Spoon cold soup into freezer-proof containers. Label, date and freeze for up to three months. Thaw in fridge overnight.

Method

Step 1 of 3

Remove stuffing from chicken and discard. Place chicken, thyme and stock in a large saucepan, or enough water to cover the entire chicken. Bring to the boil over high heat. Reduce to low, cover with a lid and simmer for 40 minutes. Turn off heat and leave chicken to poach for a further 20 minutes.

Remove chicken from stock and shred into small pieces. Discard thyme. Return saucepan with stock over high heat and bring to a simmer. Add pasta and cook for 5 minutes. Reduce temperature to medium and add tomatoes, beans and carrots. Simmer for a further 5 minutes or until warm. Stir in cannellini beans and half of the parsley.

Ladle soup into bowls. Serve sprinkled with remaining parsley and parmesan.
