- 1.70kilograms Woolworths whole marinated seasoned chicken
- 1tablespoons extra virgin olive oil
- 500grams frozen corn kernels
- 240grams Woolworths mild taco sauce
- 400grams Woolworths diced Italian tomatoes
- 420grams Woolworths no-added-salt red kidney beans, drained, rinsed
- 12 flour tortillas
- 2 cups Woolworths tasty shredded cheese
- 2 tomatoes, finely chopped
- 1 red onion, thinly sliced into rounds
- 1/2 bunch coriander, leaves picked
- 1 Hass avocado, halved, cut into wedges
- 1 lime, cut into wedges
Description
Take your whole chicken to the next level with this traybake that combines Mexican flavours with beans, bright tomatoes and avocado.
Instruction tip
Freezing tip:Cut leftover cold tortilla bake into portions. Cover, label, date and freeze for up to three months. When ready to eat, thaw portion in fridge overnight.
Method
Step 1 of 4
Preheat oven to 200°C/ 180°C fan-forced. Remove chicken from packaging. Place chicken on a baking tray and roast for 20-25 minutes per 500g or until cooked through and golden-brown. Remove from oven. Cool. Shred chicken, discarding skin and bones. Reserve pan juices.
Step 2 of 4
Heat oil in a large 30c-wide, 5cm-deep frying pan over high heat. Add corn and cook, stirring occasionally, for 5 minutes or until charred. Transfer to a bowl and set aside.
Step 3 of 4
Combine chicken, remaining pan juice, taco sauce, diced tomatoes and beans in a large bowl.

Cover the base and sides of the pan with 4 tortillas, overlapping slightly. Spoon one-third of the chicken mixture over tortillas. Sprinkle with ⅓ cup cheese. Continue these steps two more times to create 3 layers in total, finishing with chicken mixture. Scatter over remaining cheese and top with corn. Bake for 30 minutes or until golden. Top with avocado, tomato, onion and coriander. Serve with lime wedges.
