  • 425grams Old El Paso Black Beans, drained, rinsed
  • 1 Hass avocado, cut into wedges
  • 1/2 cup sour cream
  • 1/2 bunch coriander, leaves picked
  • 2tablespoons Old El Paso Green Jalapeños, drained
  • 1 lime, cut into wedges

Description

Spice up your night with this easy Mexican-style chilli and garlic rice. Serve with avocado, sour cream, jalapeno and lime wedges for the ultimate flavour fiesta.

Method

Step 1 of 3

Heat oil in a large frying pan over high heat. Add mince and cook, breaking up mince with a wooden spoon, for 8 minutes or until browned. Add onion and capsicum and cook for a further 2 minutes.

Step 2 of 3

Add sauce, rice seasoning, rice and 1  cups water. Bring to a boil. Reduce heat to low and simmer for 10 minutes, stirring occasionally, until rice is cooked. Stir in beans in the last minute of cooking.

Step 3 of 3

Serve rice mixture with avocado, sour cream, coriander, jalapeño and lime.
