- 1 chorizo, cut into 1cm pieces
- 3 long crusty bread rolls, split
- 50grams unsalted butter, softened
- 200grams La Costeña Refried Pinto Beans
- 1 cup shredded Woolworths smokey chipotle cheddar & tasty cheese blend
- 155grams La Costeña Mild Chunky Salsa
- 1/4 bunch coriander, leaves picked, finely chopped
- 115grams tortilla strips, to serve
Description
Get ready for a fabulous Mexican fiesta full of flavour with this simple recipe. Topped with chorizo and salsa, these tasty molletes will disappear fast.
Method
Step 1 of 3
Heat a large frying pan over medium heat. Add chorizo and cook for 10 minutes or until golden-brown. Transfer to a plate lined with paper towel to drain. Cover to keep warm.
Step 2 of 3
Preheat oven to 220°C/200°C fan-forced. Wash and dry pan. Heat pan over medium heat. Spread cut side of each roll with butter. Working in batches, place roll halves in pan, buttered-side down. Cook for 3 minutes or until golden-brown. Transfer to a large tray lined with baking paper, cut-side up.
Step 3 of 3
Spread roll with beans, then sprinkle with cheese. Bake for 10 minutes or until cheese has melted. Top with salsa, chorizo and coriander. Serve with tortilla strips.
