  • 300grams macaroni
  • 2 slices white bread
  • 4 rashers bacon, coarsely chopped
  • 2 cups shredded light tasty cheese
  • 20grams unsalted butter
  • 2tablespoons American-style mustard
  • 2 cloves garlic
  • 1/3 cup plain flour
  • 2 1/2 cups milk
  • 120grams baby spinach leaf
  • 1 cup frozen baby peas

Description

This creamy cheesy bacon and spinach macaroni is next-level delicious and affordable. Easy to make, this comforting dish is perfect for busy weeknights.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Grease a 1.75L (7-cup) rectangular ovenproof dish. Cook pasta in a large saucepan of boiling water for 10 minutes or until al dente. Drain.

Step 2 of 4

Meanwhile, coarsely tear bread into pieces and place in a bowl. Heat a small non-stick frying pan. Add bacon to pan and cook, stirring, for 3 minutes or until browned. Cool slightly. Add bacon and half of the cheese to bread in bowl.

Melt butter in a large saucepan over medium heat. Add mustard, garlic and flour. Cook, stirring, for 1 minute or until mixture thickens. Gradually stir in milk, whisking between additions, until combined. Bring to the boil, stirring, for 2 minutes or until sauce thickens. Remove from heat. Add remaining cheese, spinach and peas. Stir over low heat for 1-2 minutes or until spinach wilts. Stir in pasta. Season.

Step 4 of 4

Spoon pasta mixture into prepared dish. Top with bread mixture. Bake for 15 minutes or until golden-brown. Remove from oven. Stand for 5 minutes. Serve.
