Description

Use leftover beef mince as a delicious filling in these simple jacket potatoes to stretch your meat budget.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Pierce each potato with a fork 3 times, then wrap separately in foil. Place on a baking tray and bake for 1 hour or until potatoes are tender when pierced with a small knife.

Step 2 of 3

Meanwhile, place mince mixture in a saucepan over medium heat. Cook for 10 minutes or until heated through.

Step 3 of 3

Unwrap potatoes and place on plates. Cut a cross into tops of potatoes, ensuring not to cut all the way through. Using a clean tea towel, slightly open each potato. Spoon mince mixture onto potatoes. Serve topped with ricotta, parmesan and basil leaves.
