  • 1tablespoons balsamic vinegar
  • 1 lemon, cut into 6 wedges

Description

At about $4.00 per serve, this fragrant traybake mixes Italian flavours with gorgeous Australian produce to great a winning weeknight dinner.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease a large baking tray. Arrange chicken, potato, onion and garlic on prepared tray. Drizzle with 1 tbs oil. Bake for 45 minutes or until golden-brown and cooked. Season.

Step 2 of 3

Meanwhile, combine tomato and olives in a small bowl. Add balsamic vinegar and remaining oil, then stir to combine to create tomato salsa.

Step 3 of 3

Sprinkle vegetables with parsley. Serve with tomato salsa and lemon wedges.
