- 60grams unsalted butter
- 1/3 cup flour
- 1L milk
- 2 cups pizza cheese
- 1 brown onion, halved, thinly sliced
- 2 cloves garlic, crushed
- 3 zucchini, sliced, cut into half moons

- 250grams truss cocktail tomatoes
- 1/3 bunch basil, leaves picked

Description
A comforting cheesy pasta bake will always hit the spot. Try this tasty meat-free recipe with zucchini, peas and tomatoes to amp up the veggie intake and flavour.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Grease a 1.25L (5-cup) round ovenproof dish. Cook pasta in a large saucepan of boiling water for 12 minutes or until just tender. Drain.
Step 2 of 4
Meanwhile, melt butter in a large heavy-based saucepan over medium-high heat. Stir in flour and cook for 1 minute or until well combined. Gradually whisk in milk, 1 cup at a time, until smooth and thick. Bring to the boil, stirring, and cook for 2 minutes or until very thick. Season. Stir in 1 cup cheese. Remove from heat. Reserve 1 cup of mixture.

Heat a large non-stick frying pan over medium-high heat. Spray onion and garlic with oil and then add to pan. Cook, stirring, for 1 minute or until softened slightly. Add zucchini to pan and cook, stirring occasionally, for 2 minutes or until browned. Add peas and cook for a further 2 minutes. Remove from heat.
Step 4 of 4
Add pasta and zucchini mixture to pan with sauce. Toss to combine. Spoon into prepared dish. Pour over reserved sauce. Sprinkle with remaining cheese. Place tomatoes on a baking tray. Spray with oil. Bake pasta and tomatoes for 12-15 minutes or until pasta bake is golden and tomatoes are blistered. Remove from oven. Top pasta bake with tomatoes. Serve sprinkled with basil.
