  • 4 chicken thigh cutlets, skin on
  • 1 brown onion, halved, thinly sliced
  • 2 sticks celery, sliced
  • 1 carrot, finely chopped
  • 2 cloves garlic, crushed
  • 1 cup risoni
  • 400grams cherry tomatoes
  • 2 cups Woolworths salt-reduced chicken stock
  • 90grams Greek feta, crumbled
  • 1/2 cup pitted Kalamata olives
  • 250grams Sweet Solanato® tomatoes
  • 1/3 punnet oregano, leaves picked
  • 5milliliter extra virgin olive oil cooking spray

Description

This one-tray wonder is dinner goals. Succulent Greek-style chicken thigh cutlets are baked in a delicious tomato-based pasta sauce with feta and olives.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Spray chicken with oil. Heat a large, deep frying pan over medium-high heat. Add chicken, skin-side down, and cook for 2 minutes each side or until browned. Transfer to a plate. Drain any excess oil from dish.

Step 2 of 4

Add onion, celery, carrot and garlic to pan and cook, stirring, for 2 minutes or until softened slightly. Stir in risoni, canned tomatoes and stock. Bring to the boil. Remove from heat. Transfer to a 1.5L (6-cup) ovenproof baking dish.

Step 3 of 4

Place chicken in dish, then cover and bake for 20 minutes or until chicken is cooked through, pasta is tender and liquid is partially absorbed. Remove from oven. Uncover. Season with freshly ground black pepper.

Step 4 of 4

Top chicken with feta and bake for a further 5 minutes or until golden. Using a small sharp knife, slice tomatoes. Place tomatoes in a bowl. Add olives and toss to combine. Sprinkle tomato mixture over chicken. Serve topped with oregano.
