  • 100grams cherry tomatoes
  • 3 cloves garlic, peeled, sliced thinly
  • 225grams smoked sausage, sliced
  • 225grams goat cheese, softened
  • 2tablespoons pesto
  • 225grams bow tie pasta, cooked according to package instructions, reserve 0.5 cup of pasta water
  • 10grams basil, roughly chopped

Description

The salty savoury sausage and creamy goats cheese make up the lovely sauce that coats this rich pasta dish.

Method

Step 1 of 3

Preheat the oven to 190°C/170°C fan-forced.

Step 2 of 3

In an ovenproof dish, tip in the 2 tbs of olive oil, cherry tomatoes, garlic and sliced sausages. Mix thoroughly until completely covered with oil. Place the goat cheese in the middle of the dish and drizzle with the last tablespoon of olive oil. Bake for 22 to 25 minutes or until the sausage is cooked, the tomatoes have blistered, and the goat cheese has melted slightly.

Remove the dish from the oven. Tip in the pesto and the reserved pasta water and mix the cheese thoroughly. Mix in the cooked bow tie pasta and toss until fully coated with the creamy sauce. Serve hot with fresh basil.
