- 1 onions, peeled and diced
- 2 carrot, peeled and diced
- 2 celery, trimmed and diced
- 2tablespoons olive oil
- 800grams lentils, drained and rinsed
- 1 1/4 cup red wine
- 8 mediterranean sausage
- 20grams parsley, roughly chopped
Description
This delicious and hearty lentil tray bake is the perfect meaty midweek dinner.
Method
Step 1 of 2
Preheat the oven to 200°C/180°C fan-forced. In an aluminium lined baking sheet, toss the onions, carrot, celery and olive oil. Bake it for 15 minutes or until vegetables are softened.
Step 2 of 2
Tip in the lentils and red wine and mix it through. Top with with sausage and half of the parsley. Return it to the oven and bake for another 30 minutes. Upon serving, garnish with more chopped parsley.
