Description
This gnocchi Florentine is simple to put together and something a little different for brunch or dinner.
Method
Step 1 of 3
Pre-heat the oven to 180°C/160°C fan-forced. Cook the gnocchi in a pan of boiling water for 2 minutes, add the asparagus and cook for 1 minute. Drain well, reserving a little cooking water.
Step 2 of 3
Heat the oil in a large pan on medium high heat and cook the spring onions and garlic for 2 minutes, stir in the spinach and cook for 2 minutes, add the gnocchi, asparagus, cream and cooking water and cook for 1 minute. Spoon into a baking dish.
Step 3 of 3
Make wells in each dish and crack and egg into it. Bake for 15 minutes, until the eggs are set.
