- 300grams mixed beans, drained
- 2/3 cup passata
- 1 medium red onion, peeled and diced
- 1tablespoons canola oil
- 1teaspoons chilli flakes

Aromatic and spicy bean filling in this baked potato recipe.
Method
Step 1 of 5
Pre-heat the oven to 200°C. Wash and scrub your potatoes.
Step 2 of 5
Cut the sweet potatoes in half, length wise. Bake the sweet potatoes in the oven for 20-25 minutes.
Step 3 of 5
On a pan on a medium heat with the oil, fry the onions for 2 minutes.
Step 4 of 5
Add the beans, passata and chilli and allow to simmer for 6 minutes. Once the potatoes are cooked, allow to cool slightly.
Step 5 of 5
Fill with the bean mix, cover with cheddar cheese and garnish with chives.
