Stuffed Sweet Potato Skins

- 4 medium sweet potato, washed
- 400grams mixed beans, drained
- 4 cloves garlic, peeled and crushed
- 1 medium white onion, peeled and diced
- 1teaspoons cumin
- 1teaspoons paprika
- 1teaspoons chilli flakes
- 2 medium avocado, peeled, de-seeded and mashed
- 80grams cheddar cheese, grated
- 1/2 lime, juiced, use juice only
Description
A spicy bean stuffing with some refreshing and creamy avocado.
Method
Step 1 of 7
Pre-heat the oven to 180°C. Wash and scrub the potatoes leaving the skin on and then slice in half lengthways.
Step 2 of 7
Roast the potatoes skin side down in the oven for 1 hour. While these are cooking, you can cook the beans as per tin instructions.

Heat up a non-stick pan to a medium heat and fry the garlic and onion for 3 minutes.

Add the cooked and drained beans into the pan with the spices, mix together well and continue to fry for 4 minutes.

Remove the potatoes from the oven and carefully remove 3/4 of the flesh from the inside with a fork and add the flesh to the pan with the beans and mix.

In a small bowl add avocados and lime juice and crush, mixing together to form a guacamole spread.
Step 7 of 7
Now transfer your chilli mix back into the skins and cover with the cheddar cheese before serving with the guacamole on the side.
