  • 450grams fresh chorizo sausages
  • 1 red capsicum, deseeded, thinly sliced
  • 1/2 red onion, finely sliced
  • 1.40kilograms sweet potatoes (approx 4 sweet potatoes)
  • 1/2 cup light sour cream
  • 5milliliter virgin olive oil spray
  • 1 lime, halved
  • 100grams baby spinach leaves

Method

Step 1 of 5

Preheat oven to 180°C. Line a roasting pan with baking paper.

Step 2 of 5

Scrub sweet potatoes, pat dry and prick a few times with a fork. Place in pan, spray with oil and rub with a pinch of salt. Roast for 45 minutes or until tender when pierced with a skewer.

Step 3 of 5

Meanwhile, heat a large frying pan over high heat. Squeeze sausages from casings into pan. Cook for 6 minutes, breaking up lumps, or until golden brown and crisp. Add capsicum and cook for 2 minutes or until it starts to soften.

Step 4 of 5

Squeeze juice from one half of lime and stir into sour cream. Season.

Step 5 of 5

Split sweet potatoes lengthways, almost all the way through. Top with chorizo mixture, spinach leaves and onion. Serve with sour cream and remaining lime cut into wedges.
