  • 2 cloves garlic, crushed
  • 2teaspoons ground cardamom

  • 1teaspoons dried chilli flakes
  • 6 skin-on chicken thigh cutlets
  • 2 bunches Dutch carrots, trimmed, scrubbed
  • 2 red onions, halved, cut into wedges
  • 1kilograms potatoes, coarsely chopped
  • 1/2 cup coconut cream
  • 40grams salted butter
  • 1/3 cup Woolworths pistachio kernels, chopped, toasted
  • 1 long green chilli, sliced
  • 100grams snow peas, blanched
  • 1/3 bunch coriander, leaves picked
  • 1 lime, cut into cheeks

Description

Impress at dinnertime with this budget-friendly garlic and turmeric roast chicken with coconut mash. The delicious flavour combination will get the whole family's approval.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Grease and line a baking tray with baking paper. Combine oil, garlic, spices and chilli in a large bowl. Add chicken, and then toss to coat.

Step 2 of 4

Heat a large frying pan over medium-high heat. Cook chicken, in batches, for 2 minutes each side or until brown. Transfer to prepared tray. Add carrots and onion to tray. Bake for 35 minutes or until cooked.

Step 3 of 4

Meanwhile, cook potatoes in a large saucepan of boiling water for 10-12 minutes or until tender. Drain, then return to pan. Add cream and butter and mash over low heat until fluffy and smooth. Season. Combine pistachio and chilli in a bowl.

Step 4 of 4

Spoon potato onto serving plates. Top with carrot, onion, snow peas and chicken. Sprinkle with pistachio mixture and coriander. Serve with lime cheeks.
