- 2 medium sweet potatoes
- 315grams falafel
- 1/4 red cabbage
- 1 carrot
- 4 grain bread rolls, split
- 1/3 cup Woolworths Greek-style natural yoghurt
- 60grams baby spinach leaves
Description
This delicious, nutritious recipe will never fail to impress on burger night. Slather rolls with Greek-style natural yoghurt, then top with salad and falafel for an easy, speedy dinner.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Line two large baking trays with baking paper. Cut potato into 2cm-thick sticks. Bake for 25 minutes, or until potato is crisp and beginning to char on edges.

Meanwhile, add falafel to remaining prepared baking tray. Bake for 6 minutes, or until falafel is crisp on the outside and heated through.
Step 3 of 4
Cut falafel in half. Shred cabbage and grate carrot.
Step 4 of 4
Spread roll bases with half of the yoghurt, then top evenly with spinach, cabbage, carrot and falafel. Top with remaining yoghurt. Season with pepper. Sandwich with roll lids and serve with chips.
