- 1 eggplant
- 5milliliter extra virgin olive oil cooking spray
- 8 Woolworths pork sizzle steaks
- 400grams Woolworths COOK baby potatoes with herb & butter
- 420grams Woolworths no-added-salt diced tomatoes
- 2/3 cup light shredded cheese
- 1 lemon
- 120grams baby rocket leaves
- 2tablespoons 99 per cent fat-free balsamic salad dressing
- 1/4 bunch basil, leaves picked
Description
This Italian-style pork parmigiana is nutritious, packed with juicy flavours and ready in 20 minutes. Switch up your favourite parmy recipe with this healthier alternative.
Method
Step 1 of 4
Preheat oven grill to high. Grease a baking tray. Cut eggplant in half lengthways, then each half into 8 slices. Spray eggplant with oil.
Heat a large frying pan over medium-high heat. In pan, cook eggplant, in batches, for 2 minutes each side or until tender. Transfer to a plate.
Step 2 of 4
Spray pork with oil. Reheat pan, then cook pork, in batches, for 1 minute each side or until browned. Transfer to prepared tray.

Meanwhile, cook potatoes following packet directions to air-fry or steam. Spoon tomato over pork, then top with eggplant and cheese.
Step 4 of 4
Grill pork in oven for 2 minutes or until cheese is melted and golden-brown. Zest and juice lemon. Toss potato with lemon juice and zest. Toss rocket and potato with dressing. Sprinkle pork with basil. Serve pork with rocket mixture.
