- 2 Lebanese cucumbers, thinly sliced
- 1 small red onion, halved, thinly sliced
- 1/4 cup rice wine vinegar
- 500grams chicken thigh fillets
- 1tablespoons red curry paste
- 2 cloves garlic
- 150grams green beans, sliced
- 450grams Woolworths microwave brown rice
- 1/3 bunch coriander
- 1 lime, cut into wedges
- 5milliliter extra virgin olive oil cooking spray

Description
There's not much to this dinner dish, with ten ingredients and 10 minutes cooking time. The flavour, however, is out of this world. Make a plate and feel good doing it.

Use-it-up tip:Use drained pickling vinegar to make salad dressings or mayonnaise.
Method
Step 1 of 4
Place cucumber and onion in a bowl. Add vinegar, mix well and then set aside for 10 minutes.
Step 2 of 4
Meanwhile, place chicken in a large bowl. Add paste and half of the garlic. Mix well.
Step 3 of 4
Heat a large non-stick frying pan over medium-high heat. Add chicken and cook for 5 minutes each side or until cooked through and browned. Transfer to a plate.
Step 4 of 4
Add beans and remaining garlic to pan and cook for 1 minute. Add rice and cook for a further 3 minutes or until the beans are tender and rice is hot. Drain cucumber. (See tip.) Add coriander to cucumber and toss to combine. Spoon cucumber over a serving platter. Top with chicken. Serve with rice and lime wedges.
