  • 1tablespoons smoked paprika
  • 2 cloves garlic, crushed
  • 1 Lebanese bread
  • 1/2 iceberg lettuce
  • 1/2 bunch red radish
  • 2 tomatoes
  • 1/3 bunch continental parsley
  • 1 Lebanese cucumber, halved lengthways, sliced
  • 1 red onion, thinly sliced
  • 2 lemons, cut into cheeks
  • 5milliliter extra virgin olive oil cooking spray

Description

Spiced chicken slices mingle with toasted Lebanese bread and a salad with lemon cheeks to squeeze over.

Method

Step 1 of 4

Place chicken in a shallow bowl. Add paprika and garlic and spray with oil. Toss to evenly coat. Spray bread with oil. Heat a large non-stick frying pan over medium-high heat. Cook bread for 1 minute each side or until toasted. Transfer to a chopping board. Cool. Tear into pieces. Return pan to heat.

Add chicken to pan and cook, covered, for 4 minutes each side or until cooked through and browned. Transfer to a plate. Cover and rest for 5 minutes. Reserve pan juices. Slice chicken.

Step 3 of 4

Using a large knife, shred lettuce. Slice radish into thin rounds. Coarsely chop tomatoes.

Step 4 of 4

Pick leaves from parsley. In a bowl, combine lettuce, radish, tomato, cucumber, onion and bread. Top with chicken. Drizzle with pan juices. Season with freshly ground black pepper. Serve with lemon cheeks.
