  • 250grams banana prawns, peeled and deveined
  • 300grams frozen basa fillets, thawed
  • 2teaspoons salt-reduced soy sauce
  • 2teaspoons sesame oil
  • 1 lime, zested, cut into wedges
  • 2 cloves garlic, crushed
  • 1/3 bunch coriander, leaves picked
  • 2 spring onions, thinly sliced
  • 1 long red chilli, sliced
  • 1 large carrot, finely grated
  • 24 gow gee wrappers
  • 2 bunches broccolini
  • 250grams Woolworths microwave brown rice
  • 5milliliter extra virgin olive oil cooking spray

Description

Let your processor do the work in these handmade steamed dumplings stuffed with seafood, lime zest, garlic and chilli atop a bed of broccolini and brown rice.

Thawed frozen spinach can be swapped for broccolini.

Method

Step 1 of 4

Place prawns, fish, soy, oil, lime zest, half of the garlic, half of the coriander, half of the onion and half of the chilli in a food processor. Process until almost smooth. Stir in carrot.

Step 2 of 4

For each dumpling, place a wrapper on a clean work surface. Top with 2 tsp dumpling mixture and pinch to form a pouch. Repeat to make 24 dumplings in total.

Step 3 of 4

Place dumplings in a bamboo steaming basket over a large saucepan of simmering water, careful to ensure basket avoids touching water. Cover basket with a tight-fitting lid and steam for 5 minutes or until dumplings are cooked. Remove from heat.

Step 4 of 4

Process broccolini until finely chopped. Heat a large non-stick frying pan over medium-high heat. Spray rice with oil. Add rice and broccolini to pan and cook, stirring, for 3 minutes or until heated. Add remaining garlic and season. Place rice in a serving bowl. Place dumplings on a serving platter and top with remaining chilli, remaining onion and remaining coriander. Serve dumplings with rice and lime wedges.
