Instruction tip
Swap tip:
If you don't have eggs on hand, try topping this dish with pan-fried tofu instead.

Method

Step 1 of 4

Cook noodles in a large saucepan of boiling water for 5 minutes or until tender. Drain and place in a heatproof bowl.

Step 2 of 4

Meanwhile, heat a large deep non-stick frying pan over medium-high heat. Add sesame seeds and cook, stirring, for 30 seconds or until golden. Transfer to a small plate.

Step 3 of 4

Using a large knife, shred cabbage. Heat half of the oil in same pan over medium-high heat. Add onion and garlic and cook, stirring for 2 minutes or until softened slightly. Add beans and cook for 1 minute, then add cabbage and buk choy and cook, tossing occasionally for 5 minutes or until vegetables are tender. Add noodles, soy, sesame oil and mirin and toss for 1 minute or until heated and combined. Transfer to serving bowls. Wipe pan clean.

Step 4 of 4

Add remaining oil to pan. Crack eggs into pan and cook for 2 minutes for medium or until cooked to your liking. Top noodles with an egg. Sprinkle bowls with sesame seeds and chilli. Serve.
