  • 1/2 cup panko breadcrumbs
  • 2teaspoons dried chilli flakes
  • 1/2 cup freshly grated parmesan
  • 8 Woolworths beef sausages, coarsely torn
  • 1 brown onion, finely chopped
  • 1 large carrot, finely chopped
  • 2 sticks celery, finely chopped
  • 2 cloves garlic, crushed
  • 840grams no-added-salt diced tomatoes
  • 375grams pappardelle

Method

Step 1 of 4

Pick leaves from half of the rosemary, then snip remaining rosemary into sprigs. Heat 1 tbs oil in a large frying pan over medium-high heat. Add breadcrumbs and cook, stirring, for 1 minute or until brown. Add chilli and cook for 30 seconds. Transfer to a bowl. Cool. Add rosemary leaves and parmesan. Wipe pan clean.

Step 2 of 4

Place pan over medium-high heat. Add sausages. Cook, stirring to break up sausages, for 3 minutes or until browned. Drain away any excess fat. Transfer sausage to a large bowl. Add onion, carrot, celery and garlic to pan. Cook, stirring for 2 minutes or until softened. Add sausage and tomatoes. Bring to the boil. Reduce heat. Simmer, stirring, for 10 minutes or until mixture thickens.

Step 3 of 4

Meanwhile, cook pasta in a large saucepan of boiling water for 10 minutes or until tender. Drain pasta, reserving 1/3 cup liquid. Return pasta and liquid to pan.

Step 4 of 4

Add sausage mixture to pan and toss to combine until warmed through. Spoon into serving bowls. Serve sprinkled with panko and rosemary sprigs.
