  • 420grams Woolworth no-added-salt black beans, rinsed, drained
  • 168grams Woolworths crunchy taco shells
  • 300grams Woolworths fine cut coleslaw kit
  • 1/3 cup Woolworths mayonnaise
  • 1/4 bunch coriander, sprigs picked
  • 1/2 cup Woolworths shredded tasty cheese

Description

Change up taco night with this tasty, simple, budget-friendly recipe that will impress the whole family.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Heat oil in a large non-stick frying pan over medium-high heat. Cook chicken, in batches, for 2 minutes or until browned and cooked through. Return all chicken to pan. Add garlic and cumin and cook for 1 minute or until fragrant. Season. Remove from heat. Stir in beans.

Meanwhile, bake taco shells for 3 minutes or until toasted.

Step 3 of 3

Combine coleslaw and mayonnaise in a large bowl. Fill taco shells with coleslaw and chicken mixture. Top with coriander and cheese. Serve.
