  • 230grams Mission White Corn Tortilla Strips
  • 560grams Woolworths COOK slow-cooked pork shoulder with BBQ sauce
  • 1 cup Mexican-style cheese
  • 150grams Woolworths finely shredded coleslaw
  • 1 cup sour cream
  • 1/4 bunch coriander, leaves picked
  • 1 jalapeno, thinly sliced

Description

Bursting with delicious Mexican flavours, this pulled pork and coleslaw nachos with jalapeno will be the highlight of your next fiesta.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Arrange tortilla strips in an even layer over a medium baking tray.

Step 2 of 4

Pierce the flat side of pork bag twice. Place pork on a microwave-safe dish and microwave on high for 8 minutes. Remove pork from bag and shred. Reserve sauce.

Step 3 of 4

Spoon pork over tortilla strips. Drizzle with reserved sauce. Sprinkle with cheese and bake for 10 minutes or until golden.

Step 4 of 4

Top with coleslaw, sour cream, coriander and jalapeño. Serve.
