- 500grams lean beef mince
- 1packets chilli con carne seasoning
- 1/2 cup water
- 3 roma tomatoes, chopped
- 1 medium avocado, chopped
- 1tablespoons lime juice
- 1 clove garlic, crushed
- 2tablespoons coriander leaves, chopped, plus extra to garnish
- 200grams plain corn chips
- 1 cup grated tasty cheese
- 1 lime, cheeks (to serve)

Method
Step 1 of 4
Preheat oven to 220°C (200°C fan-forced). Heat oil in a large frying pan over medium heat. Add onion and cook, stirring occasionally, for 5 minutes or until softened.
Step 2 of 4
Increase heat to high. Add mince and cook, stirring until just browned. Stir in chilli con carne seasoning, water and two-thirds of the tomatoes until combined. Reduce heat to medium-low. Cover and cook, stirring occasionally, for 8 minutes or until tomatoes have softened.
Step 3 of 4
Meanwhile place avocado and lime juice in a bowl. Mash lightly with a fork. Stir in garlic, coriander and remaining tomatoes. Season with salt and pepper, to taste.
Step 4 of 4
Spread corn chips over the base of a shallow 3-Litre (12 cup) capacity ovenproof dish. Top with mince mixture. Sprinkle over cheese. Bake in pre-heated oven for 10 minutes until cheese has melted. Top with avocado mixture and garnish with extra coriander.
