  • 350grams sweet potato, cut into long wedges
  • 2teaspoons extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 medium zucchini, finely grated
  • 260grams lean beef mince
  • 1teaspoons ground coriander
  • 1tablespoons ground cumin
  • 140grams no-added-salt tomato paste
  • 3 cups light Greek-style natural yoghurt
  • 200grams cherry tomatoes, halved
  • 1/2 bunch coriander, leaves picked

Description

Loaded sweet potato fries is comfort food personified. These potato wedges are covered in beef mince, light Greek-style yoghurt and cherry tomatoes for the ultimate flavour combo.

Method

Step 1 of 5

Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper.

Step 2 of 5

Toss potato wedges with half of the oil and spread on prepared tray. Bake for 20 minutes, turning halfway through or until golden-brown.

Step 3 of 5

Heat remaining oil in a large frying pan over medium heat. Cook onion and zucchini for 5 minutes or until tender. Add mince and cook, breaking up lumps with a wooden spoon, for 3 minutes or until cooked through.

Add spices and stir to combine. Add tomato paste and cook for 5 minutes or until thickened.

Step 5 of 5

Top wedges with mince mixture, a little yoghurt and tomatoes. Sprinkle with coriander and serve with remaining yoghurt.
