- 2 white onions
- 500grams mushrooms
- 500grams tomatoes
- 1.20kilograms lamb
- 2tablespoons Balti paste
- 1 can coconut cream
- 1 can chick peas
- 1tablespoons crushed ginger
- 1tablespoons crushed garlic
- 5 dried chillies

A delicious rich lamb curry
Instruction tip
You can use any other meats, chicken/beef for the curry.
Method
Step 1 of 6
Chop onions and cook in 2tbsp olive oil with garlic, ginger and Balti paste.
Step 2 of 6
Next add the lamb until coated with onion and spices.
Step 3 of 6
Once lamb is partially cooked add mushroom and tomatoes.
I used mostly cherry tomatoes that I halved. Button mushrooms that I quartered.
Step 4 of 6
Add the dried whole chillies to the mixture.
As the veggies cook down they'll release their natural juices and create the sauce.
Put a lid on the pan for 45 minutes, stirring occasionally.
Once thickening add the coconut cream.
Step 5 of 6
Cook for a further 30-45 minutes until curry darkens and thickens a little more.
Step 6 of 6
Garnish with coriander and serve with either rice or naan, or both!
